Why does my PDF font change when I edit it?

Because the editor could not read the font embedded in your document and fell back to a standard one, usually Helvetica or Arial.

PDFs embed fonts as subsets containing only the characters already used. An editor that cannot extract and reuse that subset has no choice but to substitute.
